Anyone have any? I have a boy MAYBE coming over tomorrow after work and I said I'd make dinner....except its just me so usually dinner is a salad. Anyone
have anything thats quick and easy....and good? I don't eat meat either so I have no idea how to cook it.... Any help?

Thats a good idea! The roasted veggies sound good but time consuming.

do a pesto penne with mushrooms onion and green beans sauteed together in oilve oil and seasonings on the side?

How bout some 3 cheese ziti
15oz ricotta cheese 2 eggs, beaten 16oz ziti pasta (i use whole wheat) 28oz pasta sause (i use ragu) 8oz mozzarella cheese 1/4 Parm cheese Mix ricotta, parm, eggs In another bowl, mix cooked pasta and pasta sauce In13x9 greased pan, layer 1/2 pasta mix, then 1/2 cheese mix, repeat. Coat w/ parm cheese. Bake 30 min@ 350F |

You could also do homemade pizza (you could do a basic sauce and cheese, or you could do a white pizza with ricotta, mozzarella, spinach, artichokes, broccoli,
crushed red pepper, garlic and oil).
Or tacos could be fun and super easy! Beans, lettuce, sour cream, salsa/taco sauce, cheese, guacamole, taco shells or tortillas. |

my bad, yes mix the parm w/ the ricotta and eggs, then coat with the MOZZARELLA....sorry for the mistake
