I think you mean jailbreaking iPhones, which is unlocking the P.O.S. from AT&T to use on other carriers.

technically, it's adding a custom firmware package to the ipod/iphone in order to get 3rd party repos and packages.
It's possible to unlock all ipod touch and iPhone models. |
