I'd suggest adding proscuitto, cream cheese and onions to the spinach/feta one. And rather than pounding it, create a pocket because then you can stuff SO
MUCH MORE.

I marinate chicken breasts in:
lemon juice couple cloves of garlic bit of garlic salt red pepper flakes olive oil paprika pepper Then I grill them. Super yummy. |

If it's chicken breast, pound it out flat then put a few stalks of asparagus(or whatever veggie you like) on one end with whatever cheese you like that
melts well. Roll it up and sear it with the fold down so it won't come unrolled for 3-5 minutes on each side. Finish baking off in the oven for another
10-15 minutes at 400 degrees. YUMMY! Make sure to season the chicken with salt and pepper on each side before rolling up.

Ok I wish I had snapped a picture for the amount of FAIL in my attempt to make the Spinach-Feta chicken. Jeeeeze. When I put it into the oven it looked like
something I had chewed up and regurgitated. I am assuming it isn't supposed to fall apart like that? BUT it tasted amazing so I ended up not caring that it
looked like a five year old put it together
