I have almost nothing in my repertoire that fits this. I can cook fine (definitely no gourmet chef but I do all right) but I take forever. It takes me like five minutes to dice up an onion.
So, I'm going to need very fast dinner ideas.

I'm talking like 10 minute, easy prep, not a lot of dishes. Actual cooking time doesn't matter as long as it doesn't require me babysitting it.
Letting it go in a crockpot all day is fine, tossing it in the oven and checking in 45 minutes works, whatever. And no fancy ingredients. Nothing you might
have to go to a specialty store for. We don't have any around here. Basically just run of the mill stuff everybody has in their cupboards.

Chicken
Cream of mushroom soup rice Throw it all into a casserole dish and cook for like an hour. I think prep time is 5-7 mins max, just make sure the chicken is defrosted first. |

i love making peppersteak in the crock pot. just buy beef cubes, soy sauce, teriyaki sauce, beef base, peppers - red and green, and onions. cut onions and
peppers in slices. put the beef at the bottom of the pot, add the beef base + water, add the peppers/onions, season with sauces and whatever else...and
you're done! set it and check back in a few hours
prep time would only require you to mix the beef base with water, slice peppers and onions, and the beef is already cubed so nothing there. |

Well then it sounds like the crock pot is your best bet depending on what ingredients you have. It basically just takes throwing everything in and turning it
on. One I like is just throwing in a bunch of pork chops, a package of dry onion soup mix, water or you can just add BBQ sauce. WHen you get home just make
rice as a side and a tossed salad and you have a meal. There are also great crock pot recipe web sites.

Rice worries me. It just never seems to get all the way done for me, no matter how long I cook it or whether it's the regular stuff or minute rice or
whatever it's called. I could try it though. I think my step-mom makes something like that and I remember it being good.
And I've never made pepper steak in a crock pot. I can probably pull that off in a reasonable amount of time. And I never thought to do BBQ pork chops in a crock pot either. Thanks, all of you! |

I do a chuck roast in a crock pot. Pour in two cans/bottles of beer, about a cup of brown sugar and cup of ketchup and let it cook all day. It's amazing. I
serve it over egg noodles and often with a salad. Salads I make ahead of time. I chop it all up on a Sunday and put it in zip lock bags. My daughter and I can
take it when we want.

I have a real easy way to make great rice. I use Basmati btw because I love the flavour. But it's basically 1 rice to 2 water(or other liquid) and put it
all in a covered microwave dish and nuke for 20 minutes.
I usually use 1 coffee mug of rice and 2 coffee mugs of that boxed liquid chicken broth. I also add a bit of salt to it and sometimes lemon juice. Once the microwave beeps, I just let it sit for about 5 minutes before I take the cover off. Comes out perfect but be sure to fluff it all up with a fork and a bit of olive oil so it doesn't all stick later. I always have lots of leftovers and just put them in a covered dish and refrigerate and then use it for other leftovers. |

I'll try that rice method. Sounds easy.
And, Kim, thanks but I'm wary of cooking with alcohol right now. I caught a few minutes of an episode of Good Eats (go ahead, you can start laughing now |

1 pack of boneless chicken breasts
2 cans of Low Fat Cream of Chicken Soup (Fill one of those cans with water and add) Put all in a crockpot. I usually put it in at lunch on high and it's done and shredding to pieces by dinner time. Or if you need to do it in the morning, just cut it on low. Right before I'm ready to eat, I cook rice. Just get the instant kind that comes in a bag. I swear you can't mess that up! Just throw it in the boiling water for however long it tells you (usually around 5 - 10 minutes) and it's done. Put chicken and chicken gravy on top of rice and eat! It's probably one of my favorite meals. SO GOOD. |

I do a chuck roast in a crock potThis too. I either just put salt and pepper to taste for mine, or add a can of cream of mushroom soup. Serve over rice or egg noodles. I second the salad. I cut up a head of lettuce at the beginning of the week and we eat on it throughout the week. |
